Autumn love...

Such perfect, blissful days are the days that we don't have to do a school run and can simply, be, at home.

Today was one of those days.

Baking - Anzac biscuits and an eggplant and potato Fijian curry with eggplants fresh from the garden for dinner.

Dancing - Sah found the cd that was playing when Si was birthed and we danced with arms outstretched for a long time.

Crafting - Starting a beanie for either B or Sah with rich 'chocolate chip' wool, as Sah calls it.

Sitting and eating meals on the veranda and looking at the greenery, trees and Autumn leaves.

So much love and cuddles from my girls.

Truly a blessed day.

  1. Sounds like a beautiful, peaceful day Jen.
The curry sounds delicious as well, would you care to share the recipe? I love eggplant.

  2. It's very simple Jen - my great grandmother was making this back in the day! Just chop up an onion, dice into little squares as many potatoes or eggplants as you like. Have a bowl of peas. Brown the onion in a little oil, add spices - cumin/curry powder, then add potato and eggplant and simmer on low heat until tender. Add the peas.

Ben and my grandma often prefer a can of corned beef. (they had no fresh meat in Fiji usually and relied on cans) It should take about 2 hours of low heat to really bring out the flavor. Salt to taste and beautiful with chutney!
